Prior to last autumn’s visit, I’d never been inland and uphill.
Two things struck me. The view from Olive Thea at night, and the view from Platanos during the day.
I understand Panorama is similar.
For some reason, possibly because it’s how I visited, I now associate Olive Thea with looking down on to the bright lights of town, whilst I think of Platanos as a chance to see the south coast in more detail during the day.
And I haven’t even been to Panorana.
As they say, “discuss”.
Which do you prefer for daytime/nighttime views?
How does Panorama match up?
Any other views to recommend?
Thanks.

I haven't been to Olive Thea. I haven't been to Panorama, because the first time we tried, I was desperately grinding 4 Wheel Drive going up the hill in a Skiathos downpour and when the carpark for Panorama suddenly popped up on the right, I wrenched the wheel over and shot in where I found unsurfaced parking with mud and grass and what I imagined (without looking for it) would be a difficult stairway up to the restaurant in unwelcoming weather. So I turned round and carried on and found Platanos. There's a webcam at Panorama showing the better (than Platanos?) view of the airport, it's broken at the moment and has been for quite some time, maybe more than a year. However if you follow this link to the camera, meteo.camera/skiathos/ it's showing the view behind the writing. Because we love Platanos, we haven't bothered since.
I couldn't pinpoint any more viewpoints for you, but if you hire a mechanical transport machine to ease the walking, you can get views all over inland. A nice seat overlooking Koukounaries, a nice one somewhere on the north coast between Aselinos and Ligaries. Have a look at my videos on youtube :- www.youtube.com/playlist?list=UUTFSuXrX5I-PUAQkXUOivPQ and see various drives as examples - a magister like you should be able to drive them much quicker than I do and give the girls a bit of a squealing rush! If I still had working legs, I'd buy the Widman book and take to the wilds. Did you ever follow up on Woody's route maps that you looked at in 2017?
Or perhaps try to make contact with Janice Hughes and Anjie McChesney on Facebook Boomerangers, both residents and post pictures and videos of walking round the island.

The food at platanos is nicer than panorama. Well that's how it was years ago when we tried panorama. But considering the food at platanos is just as nice if not nicer now, you have to pay me a lot to consider swapping. I love their Greek salad, tuna salad and omelette. They do a mean nescafe frappe with ice cream too.
