Yes, I’ve stayed there twice.
Rather than fire off a quick, simplistic reply, I’ll look at my pics and notes, and give you something a bit more detailed.
Any chance of a bit more detail? How many of you are going? Ages? Have you booked a particular standard of room? Any ‘special requirements’ (mobility, etc.).
What sort of thing are you looking for? Likes/dislikes?

No specials things to know. Is the breakfast good? how about lunch is that good and is it expensive? What sort of room do they allocate you?
Do they have a Greek night?

1 - Is the breakfast good?
We were warned before we went in 2017 that it wasn't good, but we loved it. British Fry Up? Check! With a Greek Twist (sausages are different everywhere), but bacon, fried egg, baked beans, tomatoes...oh, the tomatoes. Super-tomato flavour, roasted in slices in the oven. Cereal? Great. Again, some differences to here, but more or less the same, lots of choice. Fresh fruit like it grows on trees. Tea good, coffee fine (and I'm picky with coffee). Now I went again the last week of last season, and it wasn't so good - not as much choice. But that was due to it being the last week, I think.
2 - How about lunch is that good and is it expensive?
Good, but expensive. I don't eat a lot for lunch on holiday.
3 - What sort of room do they allocate you?
Are you booking direct, or through a travel company? Whichever, you get a choice. I was upgraded for free on arrival last autumn, as the TC debacle left half the hotel empty.
4 - Do they have a Greek night?
No. Closest is, I think, Paradise at Achladies.

Thanks so much yorkshiremouth for the information you have posted.
We have been going to Skiathos since 1993, but had a break for about 4 years went to the Americas and places. We have stayed mainly in Koukounaries but pushed the boat out this year as TUI cancelled our holiday (should have been there this and next week) and got 20 % extra. We have always wanted to go there, visited two years ago as we stayed in Aghia Paraskivi and got washed out with the storms. So we tried to get a booking for the remainder of our holiday at the SPH. We couldn't take off that year as we we had booked the flight only with Thomas Cook their pilots were not allowed ton take off in the wet runway. So we ended up returning home on a ferry from Skiathos to Volos and then a coach drive to Athens, that was one of my worst experiences ever!!!
Thank you for the breakfast menu sounds great to me, breakfasts can be a bit hit and miss where ever you go. I am a fruit and yogurt person and a strong cup of tea. We mainly eat in Skiathos town for evening meal so we have not planned anything for luch have to have something though as I am diabetic.

I'm not a Palace expert, but have friends who stayed there and they found the location off-putting. So many steps to get back up from the beach (unless you use the hotel minibus) - it's also not that easy to walk anywhere for a meal/drink - although the bus stop is at the end of the steep drive. If you're lithe and fit, like Yorkshiremouth, it won't be a problem!
Re Greek nights - there's an excellent one at the Myrtia Summer Village- very close to the hotel. Walk down the hill towards Koukounaries and then along the track at the side of the Mandraki Hote. The Myrtia Greek nights are really good fun!

A few points there, and I should begin by responding to your flattering ‘lithe and fit’ comment. I’m 55, and I’d never felt so old and out of shape as when I first went a couple of years ago. I was sub-5,000 steps a day, and out if breath at the drop of a hat. And yes, there are stairs! However, there’s a good reason I didn’t mention this earlier. Champlain appears to know a fair bit already, having stayed in Koukanaries several times, so I’m guessing she knows about the position. In addition, most of the problems can be circumnavigated most of the time: There’s a shuttle bus running from the hotel to both beaches and back in the day. There’s a bus to town on a night. A taxi back will get you back up the hill. There’s a shortcut to Koukounaries tavernas (link already provided above), and since my first visit the long and winding road has had a very wide pavement added. It’s an extremely pleasant walk. I want to be clear. If you’re infirm, it may not be appropriate. But that’s MAY NOT as opposed to WON’T BE. I could imagine a situation where someone never had to tackle the hill and/or walk all holiday. Within the hotel, there are no lifts, but not many floors. Again, you’d have to be particularly infirm for it to become a holiday-spoiling issue. And, I suspect, if you book directly you can negate this by ensuring you don’t have to encounter stairs more than absolutely necessary. Ditto, if you go through a TC; there’s often a method of making requests. Nonetheless, Kate raises an important issue. I’m happy to help answer more questions if required. Good point to raise, Kate!
